New Restaurant: Redding’s Southern Cuisine

There’s a newcomer on Atlantic City’s culinary scene, adding to the already impressive selection of Atlantic City restaurants. In May, Redding’s Southern Cuisine opened up at the corner of Pacific and Kentucky avenues.  Serving up such down-home favorites as waffles, fried chicken and barbeque ribs as well as inventive entrees such as sweet potato fettuccini alfredo, Redding’s comfort food is a welcome addition to The Strip.

Redding’s is the brainchild of chef Carl Redding, the man behind the highly successful Amy Ruth’s in Harlem and at the Foxwoods Resort and Casino in Connecticut. Amy Ruth’s is named for Redding’s grandmother, who Redding credits with teaching him about cooking. Before making a name for himself with his satisfying Southern fare, Redding served in the U.S. Marine Corps and as the chief of staff to the Rev. Al Sharpton. The Redding’s menu makes several nods to Redding’s civil rights activism. Several items are named for African-American civil rights leaders and celebrities, including the Harry Carson (waffles with a grilled ribeye steak) and the Rev. Al Sharpton (waffles with fried, grilled or smothered chicken).

The expansive menu at Redding’s has a little something for everyone. Offering plenty of stick-to-you-ribs Southern staples such as bourbon-cured Virginia ham, Redding’s also serves plenty of lighter dishes, including fresh salads like the Merceda Gooding (French endive with grapefruit and Parmesan shavings). Those who have a hankering for breakfast will be happy to know that Redding’s waffle menu is available all day.  Got a sweet tooth? Surely it will be satisfied with a slice of sweet potato pie or black velvet cake. Redding’s even offers a “100% vegan-approved” veggie burger, a rare find in soul food restaurants.
